CASSIE'S SOUBISE

A neighbor, friend, and fantastic cook, fed this to Jack while I was away. He insisted I get the recipe and I'm glad I did. You'll need a 3-qt. covered casserole that will go from stovetop to oven. 6 servings

Preheat oven to 300 degrees
1/2 cup rice
4 quarts boiling! water
1-1/2 Tblsp. salt

Drop rice into boiling water and keep boiling for exactly 5 minutes. Drain immediately.

2 pounds (6 to 7 cups) thinly sliced onions
4 Tblsp. butter
1/2 tsp. salt
1/8 tsp. pepper

When butter is foaming in 3-quart casserole, stir in the onions. As soon as they are coated with butter, stir in rice and seasonings. Cover and cook very slowly in 300 degree oven for about an hour, stirring occasionally. Rice and onions will be very tender.


1/4 cup heavy (whipping) cream
1/4 cup grated Swiss or Jarlsburg cheese
2 Tblsp. butter
Minced parsley

Just before serving, stir in cream and cheese and then the butter. Taste for seasoning. Turn into serving dish and sprinkle with chopped parsley.
