PEPPERED LENTILS

Yes, another lentil recipe. They're healthy, quick to prepare from scratch and we like them! This gets its flavor from the sesame oil, so don't expect the same results if you make substitutions. Good with sliced cucumbers in yogurt. Serves 4. Can be doubled, tripled.

1 cup dried lentils
2 large tomatoes, peeled (?), seeded, and chopped
3 to 4 Tblsps. sesame oil
1 medium onion, chopped
1 green pepper, seeded and chopped
1 large red pepper, seeded and chopped
Sea salt

Simmer lentils uncovered in 5 cups of boiling water until tender -- about 45 minutes. Cook onion and red pepper in oil until browned. Add tomatoes, green pepper and lentils. Salt to taste and simmer gently 20 minutes.
