HERB-ROASTED SWEET POTATOES

Sweet potatoes, small, scrubbed and halved lengthwise

Olive oil spray (or butter)

Salt & pepper

Fresh rosemary sprigs (or other herb)

Preheat oven to 350 degrees. Season cut potatoes with salt and pepper. Spray oven-proof pan generously with cooking spray or grease with butter. Place rosemary sprigs in pan, and top each with half a sweet potato, cut side down. Roast in oven until soft, about 45 minutes.
