MARY'S WARM SPINACH SALAD WITH APPLE & THYME-SCENTED CARAMELIZED ONIONS
I sort of invented this and didn't measure, but think these are about what I did. Serves 4. 3 med. onions, halved & sliced thin Heat some olive oil in pan, I used non-stick. Cook at medium or so until starts to turn brown. Add oil if it dries out. This may take 20 minutes, keep an eye on it. Stir in garlic and lay fresh thyme on top, and press down (or stir in dried thyme.) Cook, stirring, 5 minutes or more. Add a little more olive oil, the balsamic vinegar and honey. Stir. Mix apple and spinach in large bowl and pour warm dressing over it, toss. --from jackmaryetc.com |
