
SIMPLE SIMON CHICKEN
1 pkg., about 8 ounces, cheese crackers, crushed
2 broiler-fryers, about 3 lbs. each, cut into serving pieces
2 teas. seasoned salt (Lawry's)
½ cup salad oil
Mix crumbs and salt in pie plate. Pour oil in second pie plate. Dip chicken in
oil (can be brushed on), then into crumbs to coat well. Place in single layer in
ungreased large shallow pan (cookie sheet with sides). Bake at 375 degrees for
about 45 minutes or until tender and golden brown.
