LEMON CORN PASTA TOSS

1 2/3 cups dried bow-tie pasta
12 oz. skinless, boneless chicken breast, cut in strips
1 can (14.5 oz.) Del Monte Diced Tomatoes with Garlic & Onion
1 can (14.5 oz.) Del Monte Whole Kernel Gold and White Corn, drained
1 tsp. grated lemon peel and 1 tsp fresh lemon juice
(Optional) Freshly grated Parmesan cheese

Cook pasta according to package directions. Drain.
Meanwhile, lightly coat large skillet with nonstick cooking spray. Cook chicken over medium-high heat 3 minutes or until chicken is no longer pink.

Add undrained tomatoes, corn, lemon peel, lemon juice and 1/4 tsp. coarsely ground pepper. Heat through. Add pasta and toss. Top with grated cheese, if desired.
