
FIESTA CORN AND PASTA BAKE
Another winner from Del Monte. Amazingly tasty and super quick and easy.
(I added the onion and cheese). Serves 3-4.
1-1/4 cups dried wagon-wheel macaroni or medium shell pasta
1 Tbls. chili powder
12 ounces (3/4 lb) lean ground beef
1 can (15-1/4 oz.) Del Monte Fiesta Corn, drained
1 small onion, coarsely chopped (optional)
1 can (14-1/2 oz.) Del Monte Diced Tomatoes with Basil, Garlic and Oregano
Oil
Shredded Parmesan cheese (optional, good ol' Kraft works fine)
Cook pasta according to directions, drain.
Meanwhile in large skillet, cook onion in a little oil if you're using it. Brown
beef, drain. Stir in chili powder and cook, stirring for one minute.
Stir in corn, undrained tomatoes and cooked pasta. Heat through. Sprinkle
liberally with cheese.
