
SPONGE CANDY
Lots of fun to make this old-fashioned treat. Does not work
well in humid weather.
1 cup sugar
1 Tblsp. vinegar
1 cup dark corn syrup
1 Tblsp. baking soda
Combine sugar, syrup and vinegar in heavy saucepan. Stir over medium heat until
sugar dissolves. Continue cooking without stirring until CANDY THERMOMETER
registers 300 degrees F. or a drop of the mixture becomes BRITTLE in cold water.
Remove from heat.
QUICKLY stir in soda, mixing well. It will puff up. Pour into buttered 9x9-inch
pan. do not spread as candy will spread itself. Cool and break into pieces.
