
PERSIS ROOS' PERFECT POUND CAKE
Mary's Aunt Persis, a native Canadian, by the way, was a great cook. She
used a large tube pan. You can also use two loaf pans. You need a good electric
mixer for this one.
1 pound Imperial margarine
6 eggs
1 pound superfine (not powdered) sugar
3 cups sifted cake flour (all-purpose OK)
1/2 teas each almond and vanilla extracts
Cream butter, add sugar and beat. Add eggs one at a time. Beat one minute each.
Then beat whole mixture 5 more minutes. Add flour at low speed. Add extracts.
Beat until well mixed.
Bake at 350 degrees for 1 hour in well-greased or lined pan(s).
