IRISH SODA BREAD

2 cups flour
6 Tblsp. butter
1-1/2 teas. baking powder
½ cup seedless raisins, pref. white
½ teas. baking soda
1 Tblsp. caraway seeds (optional)
½ teas. salt
1 Tblsp. sugar
¾ cup sour milk (or use sweet milk with 2 teas. vinegar for a total of 3/4 cup)

Sift together flour, baking powder, soda, salt and sugar. Cut in butter until mixture has consistency of cornmeal. Stir in raising and caraway seeds. If using sweet milk be sure it has a few minutes to sit with vinegar before adding. Add the milk while stirring quickly with a fork.

Turn dough on lightly floured board and knead for about one minute. Place in well-greased 8-inch cake pan (or shape into flattened round loaf. Mark with a cross, using floured knife. Bake for 30 minutes or more in 350-degree oven or until lightly golden
