
BLACK BEAN DIP
Ruth Marie usually leaves out the cilantro to cater to the taste of
husband Jimmy.
1 can black beans, with their liquid
4 to 6 strips bacon, cooked crisp and crumbled, reserve drippings.
1/2 cup chopped onion
Cilantro (optional)
2 to 3 garlic cloves, chopped
Sour cream (optional)
1. Put beans and any juice in can in a blender and blend till somewhat smooth.
2. Saute onions and garlic in the bacon drippings until tender.
3. Add blended beans and cook to where it boils for a few minutes in order to
meld the flavors... it reminds RM of the mud pots in Yellowstone
when it's cooking ;-))
4. Serve while warm.... top with chopped cilantro and dollop of sour cream if
desired
