FF JICAMA SLAW ... S.E. ASIA STYLE

A refreshing lime-spiked side dish. You can't taste the fish. About 3-4 large servings

1 medium-large jicama, peeled and julienned, about 1 pound
1/4 fresh red pepper julienned (or 2 hot red, Thai or serrano chiles)
2 green onions, julienned
3 anchovy fillets, rinsed and smashed
1 teas. vinegar
3 tablespoons flax oil
1 teaspoon minced garlic
4 teaspoons lime juice
1 teaspoon lime zest
(optional) Stevia Plus (up to 1/2 pack)

Mix anchovies, oil, garlic, juice, zest, vinegar and stevia. I use a mini-food processor. Whisk together. Pour over vegetables. Better if it sits for an hour or so. Serve chilled.
